Broken ice - the modern ice cream

The ZIEGRA method of operation
 

Water flows from the water reservoir of the ice machine into the cylinder of the ice maker according to the principle of communicating pipes. A cooling coil (e.g. R452A) is placed around the cylinder, which freezes the water on the inside of the cylinder. The ice iscontinuously peeled off by the screwin a very thin layer of ice from the inside wall of the cylinder and conveyed upwards. There the ice is pressed hard, refrozen and then broken.

This process allows the cold energy to refreeze the following water immediately without loss. (If the ice layer were 1 or 2 mm thick, an unnecessarily large amount of energy would have to be used for freezing due to the high insulating capacity of ice). The idea of subsequently compacting and pressing the ice means that an ideal ice thickness of up to 9.5 mm can be achieved with low energy requirements. 

As the ice is frozen on the inside wall of the cylinder, the refrigeration system of the ZIEGRA crushed ice machines is completely closed. No leaks can occur in the refrigeration system due to rotating parts. Thanks to the patented cylinder process and ZIEGRA know-how, small compressors can be used.

This has the advantage of lower power consumption.
 


ZIEGRA MicroIce

consists of small pieces of ice with an average size of approx. 5mm. It ensures good mixing and rapid dissolution and cooling. Ideally suited for mixing processes and sensitive products such as fish fillets.

ZIEGRA StandardIce

The mixture of small and large pieces of ice ensures high cooling and good shelf life - ideal for churning and process cooling.
 

ZIEGRA MacroIce

Pieces of ice up to 9.5 mm thick. MacroIce is particularly durable, can be stored for a long time and provides excellent long-term cooling, e.g. for transporting fish and displaying goods in retail outlets.
